Blueberry Banana Muffins

I recently added blueberries to my favorite fat-free banana muffin recipe and liked what I got. My original recipe has no added fat, so they are quite healthy.

Blueberry Banana Muffins

1 3/4 C. White Whole wheat flour
1 Tbsp. baking powder
1 tsp. cinnamon
1/2 C. sugar
3 ripe bananas
1/2 C. soy or other non-dairy milk
1/3 C. natural apple sauce
4.4 oz. blueberries (small container)

Topping
1 tsp. cinnamon
3 Tbsp. granular sugar

Preheat oven to 400 degrees and prepare muffin tin with light oiling or paper liners. Combine dry ingredients in a large bowl. Blend bananas, soy milk, and apple sauce in blender. Add wet ingredients to dry and mix just until integrated. Carefully fold in blueberries and pour batter into muffin tin. Sprinkle mixed topping even over twelve muffins. Bake for 18-24 minutes. Makes 12 muffins.
